Pinot Noir. The grape that makes the strongest case for travelling at all: it changes more from one hillside to the next than almost anything else, which is precisely why tasting it at home tells you so little.

Burgundy is the reference and the most fragmented — the difference between two villages is the whole subject. The Mosel and Champagne grow it in cool, marginal conditions, one for red and one mostly for sparkling. Sussex and Kent do the same thing as Champagne on the same chalk, forty years in rather than three hundred. Central Otago is the outlier: continental, high, and unambiguously ripe.
