— The place itself
Declared a wine region by royal decree in 1737 and inscribed by UNESCO in 2002. The property runs to more than 88,000 hectares across 27 settlements, and includes the mould-blackened cellars cut into the rock beneath them.

02 Getting around
Direct trains from Budapest to Tokaj; the villages beyond need a taxi or a hired car.
03 Book first
Cellar visits, which are appointment-led, and the aszú tastings in particular.
04 Shaping the days
Base in one village. The cellars are cold and the tastings are slow — two a day is plenty.
